Caol Ila 30 Years Old 1991 XOP Black
A 1991 Caol Ila single malt from independent bottler Douglas Laing that was matured in a single sherry hogshead for three decades, before being bottled in September 2021 as part of its Xtra Old Particular Black series. Aromas of stewed fruit, allspice, dark chocolate and rich peat smoke fill the nose, complemented by notes of damp autumn leaves, leather, oak spice, mocha, smoked meat and earthy bonfire ash throughout the palate.
This XOP Black Single Malt from the Caol Ila Distillery has spent 30 long years maturing in a Sherry Hogshead. It was distilled in January 1991 and bottled in September 2021. Bottled at a natural Cask Strength of 48.4%, only 190 bottles exist globally. XOP is bottled at Natural Cask Strength, exceptionally old and truly spectacular. Packed with extraordinary flavour.

NOSE
The Sherried heritage is apparent with stewed fruits and allspice, then comes Islay peat smoke and dark chocolate.
PALATE
Wonderfully thick and moreish with damp Autumn leaves, spiced oak, a leathery sweetness and bonfire ash.
FINISH
Lingers on and on with burnt brown sugar and mocha developing to cured meats and an earthy style (CSL).
